After slowly uncovering the facts that relate to who was looking for Victoria but not really why, it is time to follow those clues to Hope, South Dakota, where men are men and sheep are nervous. As the CS plays out we see 47 grab Wade's ride and head for the highway, arriving on the outskirts of Hope.
As 47 arrives at the town his first stop is the Great Balls of Fire bar, which is the bar from the matchbook he took from Wade. The primary objective is to reach the bartender to get some information, but before we do that, on the way in note the special guest cameo appearance of Kane (of Kane & Lynch fame) who is in the bar having a libation while in town for business.
Head to the restroom and, when it is clear, use the heating vent to reach the office, where you will find the videotape Evidence (Evidence 1 of 1) for this level. Grab that, as well as the M590 12GA Shotgun from the back of the office, and then use the heating vent to return to the bathroom.
In the bathroom, approach the switch by the door and activate it to cut the bar's power, which in turn cuts off the Jukebox. This fulfills the first part of the Challenge Clear the Air (the second part is completing the level). Participate in the bar fight if you like – actually you may not have a choice – and make your way to the back of the bar to chat up the Bartender there.
This Unlocks the Achievement “The Bartender Always Knows” (10G) You questioned the bartender.
You get a CS of interviewing the Bartender and then you listen to a voicemail from Birdie to you, letting you know the location of your Silverballers. That was awful nice of him!
This complete the level, unlocking the Technique Hand-to-Hand II, and you should also unlock the Challenges Evidence Collector, Infiltrator, Suit Only, and Just Passing Through.
You will very likely be doing a number of Clean-Up Replays for this level in order to collect all of the Weapons as well as the Challenges – which we will now cover:

While completionists will want to have collected everything, technically for the Challenges you really only need to collect the disguises and the Evidence, and for the other collection the Weapons.
Challenges Strategies
Chameleon
Pick up all of the disguises in the level. You will find all of them in the bar, starting with the Police Officer in the bathroom, the Bouncers and Truck Drivers in the bar proper. You will find it easiest to get these during a Rambo play-through.
Evidence Collector
Find all of the Evidence in the level. The Evidence for this level is a videotape in the office. Simply take it from the VCR to unlock this during the Suit-Only Infiltrator play-through.
Infiltrator
Avoid being spotted. Follow the guide and video for the primary play-through to unlock this.
Suit Only
Avoid using disguises. Follow the guide and video for the primary play-through to unlock this.
Chew the Fat
Get to the Bartender while avoiding starting a bar fight. Just like it sounds you need to reach the bartender without initiating the bar fight encounters by pulling the switch. The easy way to do this is ti grab the Cop Disguise and then head through the office to the back, as per the video.
Clear the Air
Instigate a bar fight then quickly slip away and reach the Bartender. You should unlock that as either part of the Primary Play-through or as part of the Chew the Fat Play-through. All you need to do for this is sabotage the jukebox and the reach the Bartender without being damaged.
ALI
Knock out all of the bouncers in the bar. It is easiest to do this during the bar fight since they will all fight you willingly.
Duck and Cover
Take no damage during a bar fight. Basically you need to start a bar fight, and then reach the Bartender without taking any damage, which means not fighting at all. You should unlock this when you unlock Clear the Air, as that requires the same basic approach.
Just Passing Through
Clear the mission. This will unlock when you get through the mission.
Mastery
Complete all of the Challenges in the level. This will unlock once you have unlocked all of the above Challenges.
