While you have a limited Crafting Capability without a Crafting Station or Furnace, with them you can do far more. But to be complete, let us first examine what you can make without a Crafting Station or a Furnace:

Snow Block: You can take x4 Snow Balls obtained by harvesting Snow and turn them into Snow Blocks.
Sticks: One of the more useful Resources since they appear in a number of critical recipes, Sticks are made from Wood Planks.
Stonecutter: This is a new object particular to the PE version that allows you to craft Stone Blocks.
Wooden Planks: The true building block of progress, you make these from the Wood Blocks you get from Trees.
Colored Wool: You can make this by dying White Wool Blocks you obtain from Sheep. Colored Wool can be created in Blue Light, Blue, Cyan, Green, Lime, Magenta, Orange, Pink, Purple, Red, and Yellow.
White Wool: This is the base Wool that is collected from Sheep. To collect it without killing them requires a set of Shears.
Flint & Steel: Requires an Iron Ingot and Flint (acquired from harvesting Gravel) this can be used to start fires.
Shears: Made from x2 Iron Ingots, this can be used to obtain Wool from Sheep as a renewable resource (meaning you don't kill the sheep to get it).
Torch 1: Created by combining a Stick and some Coal.
Torch 2: Created by combining a Stick and Charcoal.
Melon Seeds: Obtained by crafting a piece of Melon.
Mushroom Stew: A stew food item made from two types of Mushroom and a Wooden Bowl.
Sugar: Crafted from raw Sugar Cane Plants.
As was previously mentioned, the Crafting Table is the gateway to all things advanced and good for you! Really! Seriously, one of your first goals after shelter is going to be crafting a Crafting Table and deploying it in your shelter since it really is necessary for you to obtain the tools you need to get better Resources, which then allows you to make better tools, and so on... It is not a viscous circle, but a means to an end.
Like Hand Crafting the Crafting Table is divided into four core Crafts Types, the Materials and Items Menu, the Tools Menu, the Armor and Food Menu, and the Combines Menu, that last being used to help you store more of a particular resource by crafting it into Block form generally.
Bed: Used to sleep until dawn, the bed also changes your spawn point when it is used, so that the next time you are killed you will re-spawn close to your bed. Requires x3 Wooden Boards and x3 Wool.
Chest: Used to store Items, this will end up being another important craft for you since any items stored in your chests cannot be lost when you are killed.
Chests require x8 Wooden Boards to craft. You can create a Large Chest by placing two Small Chests side-by-side, gaining double the storage.
Clay Blocks: You can harvest Clay Balls from Clay Blocks along rivers and ponds and then combine x4 Clay Balls back into Clay Blocks to make them more compact and thus store more. They can be baked into Bricks in an Furnace.

Glass Pane: Created by shaping x6 Glass Blocks into panes of glass.
Glowstone: A block that is used like a Torch, for illumination at night. This is crafted by combining x4 Glowstone Dust.
Ladder: Used to climb vertically. Critical for creating shaft Mining when you are targeting specific Resources that can only be found at specific depths underground. This is crafted by combining x7 Sticks.
Nether Reactor Core: The Core of the Nether Reactor of course! This is built using x3 Diamond and x6 Iron Ingots.
Snow Block: You can take x4 Snow Balls obtained by harvesting Snow and turn them into Snow Blocks.
Sticks: One of the more useful Resources since they appear in a number of critical recipes, Sticks are made from x2 Wood Planks.
Stonecutter: This is a new object particular to the PE version that allows you to craft Stone Blocks. Crafting it requires x4 Cobblestone.
Trapdoor: Works like a normal door, but consists of a 1x1 block that lays flat on the ground. Useful to make roof access on your house when combined with a ladder. Requires x6 Wooden Boards to craft.
Wooden Door: A critical tool in protecting your shelter from unwanted visitors, your Wooden Door can be opened and closed by you at will! Requires x6 Wooden Boards to craft.
Wooden Planks/Boards: The true building block of progress, you make these from the Wood Blocks you get from Trees.
Wooden Slab: Used for making long staircases and for paving floors when you don't want the full depth of a block. Requires x3 Wooden Boards to craft.
Wooden Stairs: Pre-made Stair Segments that you can use for compact staircases. Requires x6 Wooden Boards to craft.

Bread: The mana from heaven that you create by growing and harvesting Wheat, which you get by harvesting grass (go figure).
Cake: This is a special food item and is crafted by combining x3 Wheat, x3 Buckets of milk, x1 Egg, and x2 Sugar.

Painting: Used as a decoration in your home. Has many different types, you just knock down and replace it to cycle through them.
Paper: Used to create Books and Maps, made from Sugar Cane.
Sign: Can be used to post specific information, text, or notices by the player for visitors to read.
Bone Meal: Made from Bone, can be used to instantly grow crops.
Wool Dyes: You can craft them to create Cyan, Dandelion Yellow, Lapis Lazuli, Light Blue, Lime, Magenta, Orange, Pink, and Purple using the Crafting Table.
You will be using the Furnace for the most part to create Items that require heat to complete, and those are basically:
Food: Porkchops and Chicken, and Beefsteak.
Ingots: Firing Ore to create Ingots of that metal.
Transformations: Examples at the moment are largely Cactus, which you turn into a dye by heating. Cobblestone and Sand can be cooked to make Stone Blocks and Glass Blocks respectively.
Placing Iron Ore in the Furnace will get you Iron Ingots, Gold Ore Gold Ingots, and so on...
The Stonecutter is unique to the PE version and is used to craft the various rock and stone Items in the game, which as of now consists of:
Block of Quartz: x4 Nether Quartz.
Brick Stairs: x6 Brick Blocks.
Brick (Block): x4 Bricks.

What you need to remember is that the crafting for the mobile version has been very simplified - you no longer need to place the resources in the crafts window in a specific order or even know what resources you need - you just tap the button for that object and it gets crafted.
If you look on the official MC Wiki you will see the pictures and the name of the object beside each. That should help you.
I am using a pendo 7 pad, and my screen looks different from the one shown on utube tutorials. I am not good at determining what the pictures represent, and I don't understand what is happening when I try to craft. My crafting screen does not allow me to put stuff in, and I am not at all sure what is happening when I click something - is there a utube tutorial that shows it the way my screen looks??

You need x1 Nether Core Reactor, x4 Gold Blocks, and x12 Cobblestones.
Make a plus sign with 5 cobblestone and put 4 gold on the edges, place the core in the middle cobblestone block, make a 5 cross on top same as the bottom, then put cobblestone on each of the 4 Gold Blocks.
By the way in PE you pretty much get a massive spawn attack as soon as the portal opens - so it would be a good idea to be armored up and have a decent weapon before you know, you do this...

I can't find clay anywhere. There are no rivers/ponds in my world. Just a large ocean.
Buckets are to be added in the late april update and currently animals only spawn naturally on survival and no spawn egg exists yet.
On the pc version obsidian is formed when lava is cooled quickly by water, but on PE, I think that lava can only turn to cobblestone if water falls on it
