Unfortunately, there is no "easy" way to kill him, since he appears right at the beginning of the level.
Personally, I prefer to shoot him in the head using the Shotgun (so he falls), knife the Ganados around me; repeat. About 3-4 rounds should be enough. However, that's because I have a good aim, many people find it nearly impossible to head-shot him.
There is also the knife strategy. You climb up some stairs, wait for him to come. When he does, you stab him ONCE and you drop down. Climb up again as soon as you land. Repeat. It's easy, but takes quite some time and depends on the other Ganados around you.

Vasco is right the best thing for you to do is keep blasting him in the face with the shotgun, it's rather hard because hes constantly slashing and swinging his head around, but if you get a headshot he will stumble backwards a bit making it easyer to to aim and get another, and if you manage to knock him on the ground don't waste any more shots, shooting something while it's on the ground doesnt do as much damage I don't think, and try not to panic and back off when he is coming at you, I used to do that and it doesnt help, just face him off and see how it works.
