to harvest crops, in Hay Day, tap the crop that you want to harvest and pick up the sickle. Then, drag the sickle across the entirety of the crop. This will earn you both the item that you have harvested, along with some experience points.
Crops do not go bad if you leave them out, unlike in real life - you don't have a time limit before you can harvest them basically.
TIP: Tap on a crop that has not yet matured to the point at which it is ready to harvest, and you will be shown the amount of time left until you are able to do so.

You have to wait until you level up high enough to get it in your inventory. Then you grow it like you would any other crop.
