On the bottom right hand side of the screen there is a pop-up screen with an arrow. Click on this to access the information about your Sims' Careers, Relationships and hobbies. On the Career tab tap on the right side of one of your Sims names. The option to hire them for a certain Job should pop up and you can either choose a profession if that Sim is unemployed or change the profession of a Sim that is already employed. You can only hire Sims for places that you have already built though. So if you haven't built places in your town for them to work then you must first do so before they can be hired.
