There is no manual save option in LEGO Star Wars: The Skywalker Saga. This basically means you will not be able to randomly stop in the middle of exploring the world you are in and pick up at the same point when you decide you want to play again. There is though an autosave and if you understand how it is triggered you can make it work for you.
LEGO Star Wars: The Skywalker Saga is continuously auto-saving and this tends to be just before every new encounter, you will know when an autosave is about to take place because an auto-save icon will appear in the bottom right corner of the screen in the form of a spinning lightsaber. When you see this lightsaber icon you can be reassured that your game has been saved, and it is safe to quit playing for the day.
There is a way to force the game to save your collectible progress in a level and that is by quitting to the main menu. Keep in mind that if you do this your level progress will revert to the last auto-save. Any Minikit or collectible you collected will be saved. There are no missable achievements or trophies in LEGO Star Wars: The Skywalker Saga so at the very worst you may have to restart the levels in order to obtain them if you decide to force quit the game.
