I am stuck on how to get the trace off the reciepts found in dumpster and how to get to know more about the restaurant owner

First, and repeat this to yourself, THERE IS NO TRACE ON THE RECEIPTS!
Although there is a way to talk to the guy again. Go to the alley across from the restaurant and look at the fence. Try to spot a ripped piece of jean fiber on it. Also collect the Poison on the food scraps left in the dumpster(near the receipts). You will be able to talk to the restaurant owner again and learn more stuff
