Pilot School = Old air strip, near las venturas

Driving School = San Fiero

Bike School = Las venturas

Boat school = near san fiero, across the jumbo bridge. Theres a small village there, thats where you can find the boat school

The pilot school is about the resicted area (the air fild but you have to buy it (after the SF missions))

The bike school is in LV

Bike school is on the western side of Las Venturas. It should be right by the massive arena. As for the pilot school, that's unlocked once you've completed enough missions. It's in the abandoned airport on the northern part of the third island. You'll be forced to complete it before you can finish this game.
