I found TONS. One for example is on top the big bridge to the north of San Fierro. It says on a platform on the top: "There are no easter eggs up here. Go away."
Another one is "ZomboTech", a parody of Resident Evil's Umbrella Corp. And yet, another, if you listen to one of Madd Dogs bodyguards playing a video game, you can hear him saying bad things about the main character of True Crime, because in True Crime, you had to kill some number of Timmy Vercellis, and "Timmy" wore water wings because he couldn't swim. Tommy Vercetti couldn't swim... If you want to find some more, just read an easter egg walkthrough.
