Instructions are usually on screen to do a trick no matter what difficulty you do. To execute it, you have to go up the ramp completely straight or you will grind. Do the direction stuff before you hit triangle at the lights above you. Use the directional pad if the analog stick is too much trouble.

Hit the L trigger and a direction on the Dpad. I can't remember which, unfortunately. Fliptricks are the easiest tricks on the game, so it shouldn't be hard at all for you to figure what the Kickflip is when experimenting. (:
