The resources that you gather in Anno 1800 can be split into two groups; complex products and natural resources. Complex products are resources which are the results of a production chain and they tend to be harder to acquire as you will often need to build several facilities to reach the end product. An example of this is bread. To produce bread you will need to build a farm with a grain field and windmill which turns the grain into flour. The flour is then used in a bakery to produce bread. Natural resources can be found anywere on your island and the surrounding ones by looking on your minimap. Examples of natural resources are grain, pototo and hop which can be produced just from soil.
