I have three questions. 1. Will there be holidays? 2. Will the shops like the Able Sisters be back? And finally, how will we get to change things like our skin, hair, hair color, eyes, etc.

There will indeed be holidays. These events are based on real time and you'll have to do an Online check first so make sure to your Nintendo Switch's clock is correct. The first holiday will be Bunny Day on April 1 - 12.
Shops will indeed be back such as Nook's Cranny and the Able Sisters, continue playing the game and do your upgrades for your home to progress through unlocking. Finally, you can change your looks by having a mirror or vanity on your house, simply interact with it and you can change your Appearance. You can craft them using the work bench.
