Why does the screen go black and white when a person dies?

Just a special effect or something. Time slows down after you die so that's why it turns black and white I'm guessing. To signify you've died.

It is just an effect that rockstar added into the game
You can't turn it off, there is no point to it, it's for show.

The creators wanted the game to have a cinematic effect thats also why they added the cinematic camera angle for driving
