You can't. You have to unlock them by doing certain tasks like getting all gold weapons and getting all skill points.

While playing the game, just enter a certain code, like r1, o, x, square, or whatever. Then, go to the goodies menu, and check to see if you got it right. If you didn't, try again. You DON'T need any gold weapons, or whatever, you just need to beat the game.
