I'm not sure how, but what I did was attack the tail until it came off. The 1st time I did it, it was an accident.

Use a lance or a great sword and attack the tail until it falls off

Sword and shield and Dual swords can cut it off also. I find the great sword to be easiest, as you can wait for a fireball and get one or two hits in before having to get out or risk getting hit.
The only weapons that cannot cut off tails are hammers and light/heavy bowguns.
Other monsters with removable tails are: Monoblos, Rathian, Gravios, Basarios and Diablos. Might be forgetting one but I think I got em.
