It's all about preference, I would suggest going with a greatsword, the serpent blade line is probably best. As for armor Kut-ku chest/tasset/gloves with something like genprey for the helm and legs.

With a great sword, the way to go is keep it sheathed, run around until he runs at you, and follow behind him, when he trips at the end, run in for an unsheathe swing, roll to the side, sheathe and repeat. You can also get a few unsheathe swing/roll/sheathe hits in on his tail when he shoots a fireball, giving you an extra carve if you can cut it off before you kill it.
