After I beat this game I went to load on the save file that I beat the game on and it started me on the same difficulty. (easy) So I went ahead and beat it again on easy. Now how do I keep all my stuff from my save file and play on the normal or hard diffiulties?

Unfortunately, I do not think that there is any way to keep the equipment that you got from completing the game on easy difficulty. I do not know why they did not let you keep all your equipment from previous files, but I guess that if you went up a difficulty level, then it would be harder if you did not have any of your equipment. If you want to play Metal Gear Solid 3: Snake Eater on another difficulty such as hard, then you need to look on the main menu until you see the option to start a new game and then press the X button on that. You should be about to start your new game when it will ask you for the difficulty level that you want to play the game on, as well as other things like what MGS game you liked the most, etc. If you wish to unlock all the special equipment on a higher difficulty, then you will have top beat the game on hard.

Hope this helps.
