Through the advanced menu you can find a "Build Custom Ship" option which will allow you to build a ship with any of the hulls within the game before the more advanced propulsion systems are available. Be careful, some hulls are expensive to maintain which can cut into revenue. The Ostrich is very large while having maintenance that is low relative to it's cargo capacity. .
