It's called hot route. In the pre-snap press Y then the players button. Then a list of routes will pop up in the top left of the screen

The memory size on the PSP version is more limited due to the technology of the PSP not being as good as the PS2 version, so you cannot create teams on the PSP version because of the limited space on the disc of the PSP version.
