Bellsprout, Weepinbell and Victreebel
Slowpoke, Slowbro and Slowking
Muk
Mantine
Kingler
Magby and Magmar
Pinsir (I love that pokemon and I have fire red :-( )
Remoraid and Octillery
Azumarill
And I think that's about it, in fact I'm 99.9% sure because I completed my pokedex on fire red, and those are what I couldn't find or evolve from my mate's completed leaf green pokedex.
