Try harder? Seriously, just use the spin attack and bow and arrows. When you get to the part where you have to knock the buy off the bridge, then at the start of the joust, run along the left edge, then at the last second cut over to the right side and use a spin attack.

Only focus on the bigger leader of the pack as his minions will keep spawning until his death.
Hit the A button to get a boost on Epona then ride up by the side of the big guy and swing the Wiimote to damage him, repeat until he dies.
