There is a way to sacrifice only one person. Use the hired henchman at the Temple of Avo and wait until exactly midnight to sacrifice him to the Chapel of Skorm. You'll know that it's midnight because he'll take his money from you and you'll hear someone say something like, "Get to bed you lot." This usually works right away, and especially if you use it after you haven beaten Jack of Blades the first time.
