As long or as little as you want them to, and actually, if you prefer, not at all. There are various sleep and relax options that vary in duration and most will fill your sim's sleep need to capacity within a few mins if need be. Experiment with various beds and chairs for daydreaming, resting eyes, napping, sleep and hibernating. If you want a sim that requires no sleep, buy a coffee machine and it will survive on caffeine alone :-)
