Just curious but does anyone have a specific weapon they use on a specific character?,
for example, Shotgun=elite setinal beam=flood Sniper=hunter

Its best to use the sword or the shotgun for the flood.
For Elites, dual wield a plasma rifle and probably a smg for the best results.
If that doesnt work, use a shotgun...
For hunters, smg's in the orange parts of their backs, or If you're a crack shot, a sniper in the orange neck.

I use battle rifles on Grunts,plasma pistols on Drones,energy sword on Brutes,plasma rifles on Elites,shotgun on flood and Hunters,and Sentinal beams on Sentinals.

I know the obvious weapons for enemies like you said. But on the level "Gravemind" you start out with a crabine which is a horrible weapon against the flood. But for covanet flood, the crabine is so helpful. You have to shoot them on that huge lump on their face for a one-hit-kill (unless they have shields...).

The carbine isn't bad for Flood, one hit kill when you shoot the head area.
Take that then rewind it back.

Grunt: Human weapons like magnum, battle rifle, depends on what kind of situation you are in, try to get head shots with the battle rifle. Plasma doesnt work too well on them.
Jackal: Dual plasma rifles will be able to shoot through the shields works pretty well, if you are fighting jackals on harder modes, use a sniper rifle or battle rifle because close quarters combat will kill you easily.
Elite:Really depends on what mode you are playing on, if you are playing on easy or normal, just kill 'em, pop them with the sniper or just kill em plasma to take down the shield, and use a human weapon to kill the health.
If you are playing on legendary I suggest charging up a plasma pistol, shooting them (that will take down the whole shield) and then pop them in the head with the battle rifle when their shields down.
Hunters: uhh it really depends on where you are, if you are far back try to hit the orange part with the sniper rifle, if your close use dual plasma rifles and shoot them in the head repeatedly til they die.
Brutes: for far range use a carbine and pop them in the head about 8 times, just be careful of those brute shots they have, if your close, use rockets, needles, brute shots, just dont use small weapons like SMGs and plasma pistols, doesnt work.
Drones: Oh man I hate these, just use the SMGs (hey that rhymes 
)
Sentinals: use plasma pistols charged up or use sentinal beams or carbines.
Flood: worst enemies out there, use the sword and shotgun for close range, if you dont have those use human weapons, any of them, they are better than plasma weapons.
