You gotta Grapple Valoo's Tail - it's hanging from the center of the ceiling...
Grapple it, jump to the other side and do it 3 times for Gohma to get angry and break his shell...
Now just Grapple his head when you get the chance and slash away - repeat until he freaks out and blows up...

Ok, use the grappling hook on Valoo's tail to bring the giant rock down and crush him. Do this 3 times. Then when both his pincers are both stuck in the ground, attack his eye with your sword and carry on til he dies.
