you can't choose it when you start your career .... for example if you wanna be arsenal you'll have to be a three star manager... you are gonna have to start with small teams lik major league soccer

In the cheats it says that you get 2000 points if you beat a 5 star team. What teams have 5 stars?

AC Milan, Brazil, Arsenal. There might be others but those are the only ones I can remember.

How do I get lots of points to buy good players?

Create some players before you start a career put them on the same team
A team that you can pick from the start
Then just sell them in the tranfer market piriod.

To put a created player into career mode you need to create a player before you start the career, it won't submit one into the career once it has started.
