Nothing end of story mode you could try to complete the pokedex and get all of your Pokemon to level 100 but that's all.

There is not much left to do after defeating Red. You could finish capturing all of the Legendary Pokemon, if you haven't already done so. You could also try to complete the National Pokedex and raise all of your Pokemon to Level 100. That's about it.
