Complete the 'Breaking the Ice' level by defeating the final Boss then fly up the Bat-logo elevator which is in the main room of the Batcave on the left of the Batcomputer. If you keep flying ALL the way to the right when you are in the Trophy Room you will access a studio set that resembles the Wayne Manor study featured in 1966 Batman television show. If you now swap to a character that has a grapple gun you can reveal a secret passage by pulling the grapple point found to the left of the bookcase. To begin the bonus level you need to jump on the poles and slide down.
