Why can't you kill Flood instantly with melee attacks to the back?

Because the Flood are supercelled organisms they have no brain, only goop in thier body.

The flood have no backbone, and therefore, no spinalcord. When the flood control a dead guy, same thing. The guys dead, so no cord. Break the cord, instant kill.

You can if you walk directly behind them, but if you are to the side or something or if your difficulty is Heroic or higher than it probably takes two hits.
