I have a few easy ways of defeating a boss. It differs from boss to boss.
If your facing someone slow, use force lightning and saber throw a lot, and only attack when necessary.
When facing someone fast, dash a lot, and avoid using force powers in case you miss and are left open. Engage in saber fights and constantly execute combos.

Ok if you don't know how to make alot of things blow up around you you have two options TWO anyway if you want to(ok this is getting boring so I'll cut to the chase)blow it up than use the force in a small area it usually blows every/most things up. The second one is hold C+Z+A+B than while holding it flash the wii mote and nunchuck forward than backward and if you did it right you can blow enemies backwards and blow most things by you away.
