A:Undertaker can't do the Last Ride as a finishing move. As you know, superstars and diva's can't have more than two finishers. The Undertaker has the Tombstone Piledriver pin and Chokeslam 3 set up as his finishers. You can try to go to the create-a-move-set menu and select the Undertaker. Then you can select one of his finishers and change it to the Last Ride. (I didn't try it but I think it works)
A2:Yes you can choose your finishing move, but only the two finishers assigned to the wrestler. I'll use the Undertaker to explain this question. If you have a full momentum gauge, you can do a finisher by staning in front of a groggy opponent. If you press triangle (and nothing else) then he will use his Tombstone Piledriver pin, but if you move the left analog stick while pressing triangle he will do his assigned Chokeslam instead.

Yes, all you need to do is go into the create-a-move set and change his 2nd finisher to the last ride, the announcers will also also recognize the last ride when the Undertaker performs it. Had to change it for myself, makes it a more complete 'taker for me since you can chokeslam via ultimate control grapple.

Ok a have been undertaker before only time he OR kane use the last ride is when a table is sitting up straight on the turn buckle and you use a finisher there thats the only time they use it.
And yes you can pick chokeslam is easy when they on the ground and your momentum is full press in R3 ( right analoge stick puh it down ) he makes the oppenant stand as soon as he stands press triangle and he does the chokeslam a only use the chokeslam a hate the piledriver so a a never use it so a don't know that 1
