I've heard that if you get the sour pinatas to stay they will turn to regular pinatas. I'm wondering if after you get both, do they still come around?

Once a sour pinata has change you are given a piece for your sour tower to prevent the sour ones from coming back. You have the option to turn it on or off but once the peice is added it's automatically turned on. To change that go to the the flower menu and select the totem pole looking petal to change that. Each time you tame a sour you will recieve another piece on your sour tower for the pinata you made a resident. After the first 2 there is an acheivement. Only the tame version the pinata will linger on the outskirts of your garden and you will have to attract the the second pinata by it's requirement or have the hunter get one for you. You get experience petals for attracting it yourself though.
