How do I get jets and how do I customize planes? Also, how do I get all airplanes and ones that you cannot find?

You cannot customize aircraft. To get a small jet, drive around Wardill a bit and one should spawn. Then take this over to your hangar to store it. You can also hijack one on the runway.
There are several other planes that can spawn as well though it's easier to hijack these as spawning seems to be less likely.

Well for starters if you want an airplane you need to go to the air port and theres a crib for sale but it's a airplane storage room buy buy it and then keep walking straight and then airplanes one at a time airplanes will be coming down the area some of them have guns enjoy also in the storage in the crib are two snipes57 there badass no guns but there badass
