Is it possible to have two player versus offline on one console or even system linked?

No you can only do one player infected and one player survior

You can play versus offline on one console and system link however there must be one player on each team.

For splitscreen on one console you need to get the second controller to sign in on the main menu by pressing 'start'. You can then press X from the main menu which will search for available games, press X again to setup your own match and select versus. Select your campaign and ensure that the 'permissions' is set to 'system link'. Now select 'create lobby'.

Using the same method you can set up a game for system link.
