When you go to the spier to become a gaird do you still get to find all the gargoyls

Don't worry, going to the Spire to be a guard is only temporary. You'll be back... In 10 in-game years. So complete the quests for Giles' Farm, and complete either the quest to save or destroy Oakvale before going there. You'll return and there will be changes in the world around you, but you still should be able to find all the gargoyles.
