It is possible to unlock emblems in private matches. Anytime you earn XBox Live Achievements you can earn emblems. I hope this has helped you out.

No you can't, private matches have absolutely no effect what so ever on your Xbox Live stats, titles or emblems.
Where as your Split Screen and System Link profile are seperate from your Xbox Live Stats and your offline profile is the exact same as your online in terms of what you can unlock, but there is no link between them. You also can't level up your online profile offline.
