A Sneak Strike is an instant kill that is performed by sneaking up behind a low level enemy without them spotting you.

Actually it will kill any type of enemy as long as the weapon you use is strong enough.

Any enemy that is not a miniboss or a Lynel can be sneakstruck by getting close to the mob without it seeing you, and pressing "Y" to attack when the prompt comes up.
It gives an 8x damage multiplier each time you perform one, while only using the weapon durability for one hit. You can actually chain sneakstrikes by doing a sneakstrike, running to where the mob faces after falling down from the sneakstrike recoil, and sneakstrike again once it gets back up and turns around. It won't see you. Check out this video:
