What you need to do is as soon as you see a bird flying anywhere near you shoot it with an arrow. Just have your boomerang and arrows out the whole time so if the coach ever catches on first you can target the flame and put it out with your boomerang. If any enemies come anywhere in range of you just kill with with arrows. Good luck!
I'm having exactly the same problem as you... So there is someone else out there struggling with this part. Aaaaaargh! I'd be okay if I could steer the horse while I shoot arrows, but seems like everytime I try to shoot a bird, I end up running into an obstacle, then I get soooo far behind the wagon that there's no way I can catch up to it to put out the fire. And if I can make it in range, those awful ogre things keep knocking the boomerang out of my hand before the target locks! I'm not quitting, though. I'll beat the thing. Might take me until July, but I'll do it. The rest of the game is so fun.
