You have to smack his limbs around... The most health sparing technique for me was just keep on slicing through his limbs with the x+y attack (flying something...) this leaves little time for him to attack you... (he will hardly be able to throw bones at you.)

When he tries to bite you just roll+jump away from him, and jump over his tail whenever he tries to hit you...

Equip the Nimpo you want to use and activate it with Y+B but it can be changed in the options menu.
