Its fairly simple. Just roll when he starts his spinny attack of doom, then slash him from behind, or, just hold block until he stop, but rolling is easier.
It helps to upgrade your shield and sword, or dual swords if you use the rolling method.

That is how to beat him when he comes off the rhino by the way.

It all depends on which fight, if your talking about whehe is on the rhino then just throw a spear at his rhino. If you are talking about when he isn't on the rhino then just beat his armor down with the spear and when he goes to the second floor just wail on him with aqnything. By the way when he makes his spear thing turn into dual swords and attacks with his swords glowing blue make sure you have you dual swords out and jump back before he stuns you.
