Well, when you first start the game there should be an option that allows you to filter (turn off or on) graphic content. If you left it on, then go into options from the main menu and find where it says graphic content and turn it off.

When you first started the game, there was an option to disable the blood & gore. That's your first chance to change that. However, there may be an option in the gameplay or video section of the Options menu which will also allow you to do that. Hope that helps!
