When replaying a level via the 'Level Select' option complete the following tasks to unlock the corresponding bonus.

'Character Select' Option in Arcade Mode:

Complete the game on the Medium difficulty.

Hardcore Difficulty:

Complete the game on the Hard difficulty.

Max Payne Advanced Character Model:

Complete the game on the Old School difficulty.

New York Minute Mode in Arcade Mode:

Complete the game on any difficulty.

Old School Difficulty:

Complete the game on the Hard difficulty.

One Hit Kill:

Complete the game on the Hardcore difficulty.

Unlimited Ammo:

Collect ALL Golden Gun pieces.

Unlimited BulletTime:

Earn a 'Gold' medal score (about 7,000) on ALL levels in Arcade mode.

Unlimited Painkillers:

Complete the game on the Hard difficulty with Free Aim.
