You can't there are no helicopters in this game anyways, not even in pursuits

Police heli is in nfs most wanted that called "Temp350" that you can't fly that without CopterMover

yes you can mate coz i tried it on my ps2 by hacking the game by CW cheat on my psp

cheack on youtube that CW Cheat if your stuff of how to do it
