I have started this game over many times and I can't beat him! I get close, but he always sips away. What car do I need? Is there a short cut? What am I doing wrong? HELP!

I thrashed his ass in a nearly maxed-out Ford GT so I'd use that car.

Use a Lamborghini Mercielago fully tuned, and in the canyon,if you lose, just keep restarting the race until you beat him.
the car that you need is ford gt and if you want to
defeat darius in the street easyly you can enter
infinite NOS cheat .and in the canyon you cant pass
him in the first stage you have to drive normal
and you shouldnt hit the wall because your point will not increase.
Use a Lamborghini Mercielago fully tuned, with it it is very easy to beat Darius in the streets and in the canyon at the start drive normaly but at the end when it is 90% drive fast as you can and you wil win .
i got the car at the end of the game when i was battling the three bosses in one race.
When I used a maxed-out Lamborghini Murcielago, I had lost too many times but it was easy to overtake Darius in the first corner only for me to lose the lead back in the second corner(after I had tried SO many attempts, I won). You can try out Modern Muscles like the Corvette Z06 or the Dodge Viper. Make sure you max it out before you deal with the 3 bosses(and especially Darius).
At the end of the game he keeps the title for the leader or whatever you want to call it. So there is really no good way to answer that

Also mit den SLR ging es mit dem Stadt Rennen easy. Aber Canyon... Null Chance. Bin aktuell dabei alles neu zu machen und werde für das Rennen gegen Darius entweder den Carrera GT oder denn Mitsubishi EVO. Nehmen.
Am besten du schaffst Darius I'm Canyon zu überholen.😁😀
