They should be now unlocked since you completed it

The fisherman's isles is at the south ocean next to misty ridge just look at your map by pressing select

The grand canals is at the west ocean at the bottom near the south ocean entrance

The underwater cave is also in the west ocean up near the top sort of in the middle everything is named

I don't think you can. That is just a menu for information about the animals.
