I think it may have something to do with how your character is feeling. Like when I was working really hard and doing lots of things but not eating much or having much rest, I was dreaming of him in a hypnotic type of thing where he was just working...and then when there were days that my character had not so much work to do and had pleanty of rest, he would dream of nicer things - bubbles - relaxing...
Because your person is happy or sad or just ok if you want good dreams just eat about six times a day and when you are tired.
