Choose vs mode and go to the charactar select screen hold down the start button and highlight the following characactars in order:

Haohmaru,ganjuro, basara,kyoshiro,ukyo, rimruru, haohmaru, shizmaru,nakoruru, hanzo, amakusa, gaira, galford, and shizmaru again.

Now hold x and o together and zankuru will appear as charactar.
