At the 'Loading' screen press and hold Right until Rayman appears and you can control him.

Unlock 10 Extra Continues:

At the 'Continue' screen press Up, Down, Right, Left if you have less than 3 continues.

Unlock Level Select:

At the 'Map' screen type '4ctrepfj' without the quotes to access ALL but the final level. Don't use the keypad to enter the numbers.
