On one of the scenario objectives, it may say something about 'shop profit'. What does that include? What would I need to do to complete it?

It probably says something like "monthly shop profit" or something like that. It basicly means that you need to get x amount of money every month for x months.
Shop profit is basically the profit your food, drink, item stores make such as the burgers, sodas, cowboy hats etc.
