I can't get my horses. Endurance to go past 2

Im trying to get my endurance up to 3 but I keep doing cross country and it doesnt go up

On the horse's 'profile' (which appears before you do cross country, jumping, dressage, etc.), look to see how many horse hooves there are next to 'Agility', 'Endurance' and 'Muscular Structure'. The number of hooves is the maximum number that you can get this horse's agility/endurance/muscular structure to.
I'm guessing that in your case, you have reached the maximum that your horse's endurance can reach. If you want to go higher, perhaps buy another horse.
